Published in 1783, ‘Perfect cook’ is the second Polish cookbook published in print. Wojciech Wiełądka's style and his description of the kitchen are very different from the Compendium ferculorum, the famous work of Stanisław Czerniecki, chef of the Lubomirski family, and the recently discovered [Very Good Fashion for Frying Various Confections], written in the 1680s by an anonymous cook associated with the Radziwiłł court. Wojciech Wiełądka's book is a shortened and simplified translation of the French Cuisiniere bourgeoise (Bourgeois Cook). Wiełądko, writing mainly for noble readers, tried to hide this fact and replaced the original title with the great-sounding “Kucharz doskonały”. The new title was appreciated by Adam Mickiewicz, who referred to this work in Pan Tadeusz. However, the bard had in mind a recipe from the Compendium ferculorum, published a hundred years earlier... Seemingly simple and understandable, ‘Perfect Cook’ hides many secrets.
